The Third Treat for Christmas

Caramels. Yummy, delicious, chewy, mouthwatering caramels. These things are absolutely delicious. Try them, you'll see.

1 c. margarine or butter
1 16 oz. (2 1/4 cups) packed brown sugar
1 (14 oz.) can sweetened condensed milk
1 c. light corn syrup
1 t. vanilla

Line an 8x8x2 or 9x9x2 baking pan with foil, extending foil over edges of pan. Butter foil; set aside.

In heavy big saucepan melt margarine or butter over low heat. Add brown sugar, cream, and corn syrup; mix well. Cook and stir over medium-high heat to boiling. Place the candy thermometer on the side of the pan. Cook and stir mixture over medium heat to 244 degrees, firm-ball stage (about 15-20 minutes).

Remove the saucepan from heat; remove thermometer. Stir in vanilla. immediately pour caramel mixture into the prepared pan. When the mixture is firm, use foil to lift it out of the pan. Use a buttered knife to cut into 1-inch squares, wrapping each square in plastic wrap. The cutting part might be another project for that big strong man in your life. But if you want to do it on your own--you go girl.
